I’m John Burton-Race, Executive Head Chef here at The Nook, and I have a confession: I am, and always will be, a chocoholic. With all the years I’ve spent in Michelin-starred kitchens, on television, and writing about food, you’d think I’d be able to resist temptation. But no- put praline or pistachio in front of me and I’m the first to dive in.
That’s why at The Nook, we don’t just serve extraordinary dishes, we create our own handmade chocolates in-house, crafted with the finest ingredients and a little artistry from Marjolaine, who somehow manages to make each batch even more irresistible than the last.
Chocolate as an Art Form
Every truffle is born in our kitchen, tempered to a glossy perfection and filled with silky praline or pistachio cream. Chocolate demands patience and precision, one degree too high or too low and the magic disappears. But when it’s done right, it’s artistry you can taste.
Our flavours are deliberately simple yet utterly irresistible:
• Praline Dark – bold, elegant, unapologetically rich.
• Praline Milk – smooth, creamy, the classic comfort.
• Pistachio Dark – nutty intensity, balanced with cocoa’s depth.
• Pistachio Milk – light, mellow, and endlessly moreish.
• Combination Boxes – for those who refuse to choose (and I can’t blame them).
A Healthy Obsession?
Now, as a chef I know indulgence sometimes comes with guilt…but dark chocolate gives me the perfect excuse. It’s full of antioxidants, linked to heart health, and even said to sharpen the memory.
In fact, during one very official “study” (involving me, a box of praline darks, and zero self-control), the results were undeniable:
1. A 100% improvement in mood.
2. A noticeable lift in energy.
3. And, quite scientifically, the immediate need for another.
So yes- chocolate at The Nook might be indulgent, but I like to think of it as good for the soul too.
